La Nouvelle Auberge strikes a note halfway between a cozy country restaurant and a fancy Michelin joint. Enjoyed a set menu consisting of foie gras (as good as it gets - but the mundane toast was taken to the extreme), turbot in broccoli sauce (springy-tender and mild, the sauce contributing flavor to the texture), and chocolate mousse. Flavourwise the meal was very french: subtle, sophisticated and balanced, which may be good or bad, depending on whether you're a supra- or infra-taster. The genius laid in the textures: each entry was carefully planned out and exactly executed, providing contrasts, complements, and surprises. The aforementioned toast with careful cinnamon flavouring was one example; the dessert is another, the interplay of layers of meringue, crystalized sugar, coffee and chocolate foam, and coffee bean chocolate bits dragging the consumer down in ecstatic insulin shock. (The turbot seemed flawlessly prepared, but frankly, my companion's roasted pigeon with herbs had more going for it. Then again, I'm infra.)

A special mention for the proprietress' spot-on recommendation of a local pinot gris (Shoenheltz Herrenreben 2005). Whites don't usually hit that spot; this fairly sweet wine had strong, solid notes of a good Tokaji and kept its own against the flavours of the meal.

Good food but not a "summer restaurant". Dark indoor seeting in the main restaurant. Service was ok but waiting time between dishes was awful. Had a 5 course meal and had to wait 30 min between two of the courses.
